What You're Making

A simple Italian-style sautéed spinach cooked with butter, olive oil, sweet red pepper, onion, garlic, and tomato. Everything goes in the pan at once.

  • Heat butter and olive oil in a skillet
  • Add spinach and all remaining ingredients
  • Cover and steam over high heat, then simmer until tender
Tip: Add 2 chopped anchovies to turn this into Sicilian spinach.

Step 1

Heat the Fat

  • Heat a large skillet over medium-high heat.
  • Add 1 tbsp butter and 1 tbsp olive oil.
  • Wait until the butter is melted and the fat is hot.

Add Everything & Steam

  • Add the spinach, diced red pepper, garlic, diced onion, and tomato paste or diced tomato all at once.
  • Cover the skillet and cook over high heat until steam appears.
Sicilian spinach: Add 2 chopped anchovies at this stage.

Simmer Until Tender

  • Reduce the heat to medium-low.

  • Taste and adjust seasoning before serving.

Garlic paste works great here in place of sliced fresh garlic.
